If as you say, your car is maxed out with the professional racing everything, then the only way to win is to drive harder and take the corners better. Aim for the apex of each corner and try to drive as fast as you can through each one. You can usually drive faster than them through the corners.
Oh and try setting the steering toe-in to about 75%.
I finished the game in 2 or 3 days, so it was a bit of a blur, but if I remember rightly, I didn't like the 911 non-turbo much and sold it straight after that tournament. It is not an easy car to handle.
