All of the shortcuts in the tracks in NFS porsche are pretty easy to find - all u have to do is look at your minimap (adjust the scale so that u can see a lot of the map at a time while driving).
And when the map splits up into 2, then obviously that is a shortcut - but remember, some shortcuts, like the one on "Zone industrielle" take a little bit of practice to be able to pull off at high speeds. Also, i wouldnt bother looking for shortcuts on any Monte Carlo tracks - they arent really shortcuts, more like alternate roads to take - and they dont show up on the map.
Finally, you could try doing a race with lotsa comp opponents and you could watch which paths they take.
